Bakery Hill was established by David Baker, a former chemistry teacher, with the goal of creating world-class single malt whisky using Australian ingredients and traditional Scottish methods. Originally based in Bayswater, the distillery moved to a heritage site in Kensington, Melbourne in 2022.
