Pronounced “Da-vee-lay” (Scottish Gaelic for “two thousand”), Dà Mhìle was founded by John Savage-Onstwedder, a Dutch cheesemaker and organic farming advocate. The distillery is located on Glynhynod Farm in Ceredigion, West Wales, and operates alongside the family’s award-winning cheese business.
